The choice and use of grapes in wine is quite a complex subject - not only do winemakers have to adapt their choice of grapes to different terroirs and climates - but also to different tastes, as consumers ultimately determine the style, taste and strength of the wine that they want to buy. What's more, in certain countries there are rules which dictate which grapes can be grown in which region, so inevitably some grapes will be left behind.
